As it turns out, MSG is not actually bad for you. At all. In this well-written expose of sorts, it’s clear exactly how MSG became so maligned. Furthermore, by explaining the process of making MSG, it’s clear that it’s a straightforward substance, not adulterated or poisonous, as it’s been construed. Furthermore, if we ate as much of it as we do salt, we’d be better off!
